I wanted to guess before but I couldn't remember the person's name! The old man who disagrees with Mr Hick in The Mystery of the Burnt Cottage (when Fatty and Pip break in to return his shoe.)

Sorry, it is not George and it is not the man from "Burnt Cottage."
The dashes are for "he/she" as the person's name is mentioned just before the quote.
