I could have kicked myself today.I was in Marks & Spencers buying my wife's favourite sandwich,ham cheese and pickle,and I could have bought their own version of carrot cake.

It was a mistake.But I assure you,one I will not make again! :D

This ain't carrot cake, but yesterday when we had an open day at the care home where I work, I was very impressed with a spectacular rainbow swirl cake that the services manager's wife had contributed to the afternoon tea. I wasn't taking photos, but it looked a bit like this one I found on the internet (though with two layers, not four, and fewer colours):

I must admit I couldn't resist dubbing it The Amazing Technicolour Dreamcake. 8)

On that note, Pete, have there been any further exciting discoveries on the cake-tasting front? :D

One thing you never seem to see for sale in shops, even at Easter, is Simnel cake. I love it, but no one seems to make it these days. My mom used to make a lovely one. :D

I believe I've got a recipe somewhere for Simnel cake, but have never tried it! :wink: I did have a hot cross bun yesterday, though, as we were serving them at work for afternoon tea.

My mom made two carrot cakes recently, after many years. Glad to say her skills haven't dulled!

My daughter makes carrot cake regularly - her housemates love it.

Earlier this week I made a bread-and-butter pudding, and later today I'm making some fairy cakes. A couple of weeks ago my son and I had to bake 24 fairy cakes for something at his school. I suggested that we make a few extra for ourselves, but we overdid things a bit and ended up with 42! It took ages to ice and decorate them all, but we had some lovely patterned paper cases in a range of colours and the cakes looked (and tasted!) delumptious. Despite being cold, they went like hot cakes!
